Conversations… Hay Salt and Cosy Interiors (at Brine)

Can flavoured salt (or in this case, mushroom dust) make the difference in the make or break game of F&B.

Today we’re trying a restaurant called Brine on North Bridge Road, Singapore. We had the set lunch that changes regularly and includes a drink, starter and main for $20+. You can also add in a dessert for $8+. Brine is located at 775 North Bridge Rd, Singapore 198743

Karin: That Hay Salt on your mushroom veloute is good but then I love salt. It just makes everything better. You’ll have to mention that salt if you’re writing a review.

Angie: Ok. Love salt! But can the Hay Salt make or break this experience? Oh, actually, it’s mushroom dust.

I really want to like this place. It’s small and cosy and despite the fact that I almost couldn’t find it and the lack of napkins it has a lovely atmosphere. The menu is tiny but interesting. I hate to call it fusion because fusion goes so wrong so often… will the Hay Salt pull it all together?

Karin: Maybe. Both soups are nice. My carrot was sweeter than expected and the dehydrated carrot on top was a little chewy which I actually liked a lot. Your mushroom soup was really creamy. but again, with that Hay Salt…

Angie: So risotto with sushi rice… purists would be horrified! And cooked in dashi! I thought it might be like an Asian porridge but it is definitely a risotto. Love the onsen egg oozing into it. Just makes it really rich and the crisp enoki tempura adds to the texture. Nice dish.

Karin: Look at how beautifully presented my torched sea bass is.

Angie: What’s underneath?

Karin: Gnocchi – it’s light on the inside but pan-fried in the outside so it has a bit of bite. There’s a strange flavour in the sauce.

Angie: is it Saffron? Not that it tastes bad. It’s a really nice plate of food. Maybe it’s hay salt – hee hee.

Ok so stay for dessert? They both sound yummy but there’s that cafe across the street with homewares I want to check out.
