Another fantastic Greek recipe by Evita from Agora Products is Tzatziki. This is perhaps the easiest and tastiest Tzatziki that I have made and it can go with just about anything! Use it to top a grilled or baked fish, serve it as a dip with pita; it is multi-use and super easy. You can add it to any great menu as part of the starter or as an accompaniment to the main. You might also want to serve it with their delicious Greek Salad recipe.

Again, with most Greek recipes, the quality of the ingredients is the key. Use a flavourful Greek yoghurt and fresh cucumbers. Select a top notch Extra Virgin Olive Oil (EVOO) and use the best vinegar and salt. You can’t go wrong with this recipe. The only thing I would say is to use your judgement when adding the grated cucumber. I would say a ratio of 1 (cucumber) to three (yoghurt) is the best.

Greek Tzatziki Recipe

Ingredients:
  • 1/2 a cucumber (you can decide to peel or leave it unpeeled depending on the quality – we used Japanese cucumbers and did not peel them)
  • 1.5 cups of plain full fat Greek yoghurt
  • 2 large garlic cloves, minced
  • 2 tbs EVOO
  • 1 tbs white balsamic vinegar (or just white vinegar)
  • Salt to taste
  • 1 tbs minced fresh dill
Method:
  1. Grate the cucumber and drain thoroughly. The secret is in draining as much liquid as possible from the cucumber. You may want to give it a little squeeze.
  2. Finely mince the garlic (or crush it in a garlic press) and fresh dill.
  3. Combine yoghurt, garlic, EVOO, vinegar, salt, cucumber and dill in a large bowl and mix.
  4. Add more EVOO and salt to taste.
  5. Serve chilled with pita bread as a dip or a side sauce for meat or fish.
