Vegan Sausage Roll Recipe

Vegan sausage roll recipe… This comes from The Vegetarian’s family. I love it! For the easiest, simplest dinner, we keep these vegan sausage rolls in our freezer at all times. This recipe was created by my mother in law who passed it to my sister in law who added her own twist. I then got my hands on it and am sharing it with the world!

I had not even planned to publish this but so many people asked for the recipe after I posted a pic of them on Instagram. This also explains the lack of pictures because I didn’t work out what pics I needed to take.

Mum's Vegan Sausage Rolls

Cook Time: 30 minutes
Total Time: 1 hour

This is the recipe everyone asked for. Using a food processor makes it even easier to whip together.

Ingredients

  • 4 tbs chia seeds soaked in 1/2 cup of water (no need to drain)
  • 250g pecans or walnuts
  • 1 cup stale bread crumbs or 2 slices of bread
  • 2 medium onions, minced well
  • 450g firm tofu
  • 2 cups rolled oats soaked in 1 cup of unsweetened soy or plant-based milk
  • 2 tsp garlic powder or use fresh garlic and mince well
  • 4-6 tbs tamari or soy sauce to taste
  • 2-4 tsp dried Italian herbs or to taste
  • Salt to taste
  • Two sheets of store-bought, dairy-free puff pastry

Instructions

  1. Process or chop your nuts until fine but not powdered. Place in a separate bowl.
  2. Process or chop your breadcrumbs or slices of bread into crumbs and combine with the nuts.
  3. Finely mince your onions. You can do this in a food processor. Add onions to nut mixture.
  4. Smash tofu until smooth and add to nut mixture.
  5. Add all the other ingredients and stir well to combine. Taste the mixture and adjust seasoning as needed.
  6. Cut your pre-made puff pastry in half to make a rectangle.
  7. Pipe or spoon a line of the mixture down the centre of the puff pastry. Roll the puff pastry to surround the mixture in a tube.
  8. Cut to bite-sized pieces.
  9. Bake at 190 degrees Celcius for 25 minutes or until sausage rolls are golden on top and cooked through.

Notes

We freeze these after Step 8. Just place them in a freezer container lined with baking paper. Set them apart from each other so they don't stick. They're then ready to be baked from frozen whenever you need them.

Serve these with a simple salad for lunch. I love it with My Favourite Fennel Salad or Five-Minute Kumato, Tomato and Basil Salad.
