Pea and Persian Feta Fritters with Vegan Garlic Aioli

I’ve been trying out different vegan mayonnaises for a while. So far, I’m loving this one – Follow Your Heart Vegenaise in Original. Easy to spread onto sandwiches, wraps, anything really. It has great flavour and texture and can be used for anything you’d use normal mayo for.

And now my hypocrisy – Follow Your Heart Vegenaise

I realise it is hypocritical of me using a vegan product and then adding non-vegan ingredients, but that’s my point entirely. It tastes good. Why would I bother with vegan mayo? I have no good reason. Except perhaps, that eggy flavour in real mayo is off-putting to The Vegetarian. That may have been where it all started. Why I started looking for vegan mayonnaise but now, I just like it and that’s a good enough reason for me.

Garlic Aioli to use with anything

Using the Follow Your Heart Original Vegenaise, I made garlic aioli and served it with delicious pea and marinated goat cheese fritters – not a vegan recipe, but delicious for sure. Follow Your Heart actually has its own jarred Organic Garlic Aioli but I didn’t know it at the time. This aioli was a winner.

Basically, one mashed garlic clove added to a quarter cup of vegan mayonaise. Mix well then squeeze in fresh lemon juice, mixing and tasting until you reach your desired flavour. Super easy and delicious on anything.

Pea and Marinated Goat Cheese Fritters

The fritters came about when I got a massive jar of Meredith Dairy Marinated Goat Cheese at Costco. I could hardly believe it was there because this product is a real luxury for me and usually costs more than I would like to pay. Next came what to do with such a big jar. A quick google unearthed this recipe by Yarra Valley Cheese, another great Aussie provider. So here’s my take on this fantastic recipe.

Yield: 20-25 small fritters

Pea and Marinated Goat Cheese Fritters

Delicious fritters, crisp on the outside and creamy on the inside. Delicious! I used the Cuisinart Air Fryer but you can easily pan fry these too.

Ingredients

  • 175g marinated feta, drained
  • 280g frozen peas, defrosted
  • 75g cottage cheese
  • 2 eggs
  • 1 tsp lemon zest
  • 50g plain flour
  • 1/2 tsp baking powder
  • 1 tsp shredded mint leaves
  • 1 tbs sesame seeds
  • salt and pepper to taste

Instructions

    1. Chop your peas up roughly or use a food processor on pulse mode.
    2. Add in the cottage cheese, zest, eggs, flour and baking soda and mix.
    3. Break apart the marinated feta and add it into the mix. Stir.
    4. Add mint, sesame seeds and seasoning to taste.
    5. Shape into patties and place on the air fryer tray covered with baking paper. Spray the tops with a bit of olive oil if you'd prefer more crunch.
    6. Air-fry for 8 minutes on 450F/230C degrees then turn and air-fry a further 4 minutes

Notes

Drain as much of the liquid from the cottage cheese so the mixture is not too soggy.
